Apple Cider Sausage Skillet

Last night Amber felt good enough to supervise - and even do some of the food prep - for her Sausage Skillet Dinner. This is one of her all time favorite dishes. The first time she made it she was only 11 years old.

I went over to her blog and copied the recipe - just in case YOU want to try it!

APPLE CIDER SAUSAGE SKILLET


This is a heartwarming dish that's great for large dinners and is best accompanied by corn on the cob or green bean casserole!



1 package of Hillshire Farms beef sausage (can use lean turkey sausage as well)

8-10 small red potatoes, boiled with skins on, firm enough to cut into quarters

3 small Red Delicious apples, cored and sliced

2 small onions, sliced

1/2 cup apple cider vinegar

1/4 cup sugar

Lawry's seasoning salt

Ground black pepper

Dried herbs, like Italian mix or parsley



Slice up sausage width-wise into small round pieces and add to a heated pan drizzled with olive oil. Toss in Lawry's, pepper and herbs to season to taste. Cook sausage just long enough to get a bit of char grilled black on some pieces. While sausage is cooking, combine apple cider vinegar and sugar in a small bowl. Taste test with finger and if still too bitter, add a little more sugar. (It should be a bit more sweet than bitter.) In a separate saute pan, add sliced apples and onions, 1/2 of the the vinegar/sugar mixture and seasoning salt and pepper to taste. Cover with foil or a lid and let simmer on low until apples are tender. In sausage pan, once sausage is cooked, add the quartered potatoes to the sausage. Pour over the remaining vinegar/sugar mixture and cover with foil or a lid as well, to keep in moisture. It should be on medium-low heat. Once apples and onions are ready, pour the entire pan into the sausage and potatoes and mix well. Top with an additional scattering of herbs and serve.
 
It was DELICIOUS!!
 
Today was a good day. Amber is not nearly as sick as she HAS been! She had a massage while I shopped HEB. Then we drove through Wendy's where she ordered -and ATE - 2 Junior Bacon Cheeseburgers and part of an order of fries washed down with an ice cold Coke! Now THAT'S a good day!! She has been able to eat once again - although it takes her a little while to recover as there's not much room! Her tummy is FULL of babies!!
 

I enjoyed my time 'alone' at HEB! Found this cool bottle of wine. I will be making a wine light next week as a birthday gift and loved the label on this one. Plus Pinot Grigio is one of my favorite wines. That means I will get to drink it before using the empty bottle! WIN! WIN!
 

I picked up some treats for both Louis Dean and me.
The coffee bags, pastries and Thousand Island dressing are for him.
The guacamole, Texas shaped tortilla chips, and Country Living magazine are for me!
The Crisp White wine in a little 3 pound box was meant for me.....
but I wasn't paying attention and thought it was Chardonnay.
Now it is for Louis Dean!


He also got a bonus pack of tomato seeds that came with the issue of this month's magazine.


Louis Dean stayed here baking cinnamon rolls while we were gone!
MAN! They taste as good as they smell.
Mike LOVES them so he has plenty to hold him for awhile.

Speaking of Mike......he is in the kitchen making supper as I write.

THE perfect supper for a night like this - chilly and wet!!
It is thundering and lightning!

We will be packing up and heading for home in the morning.
All the baby clothes are washed and in the proper places.
The nursery is clean and quiet.......for the time being!

There will be more to do later - but for now - it is a good feeling to see all the progress that has been made.
